Try my healthy German vegetable recipes. Sometimes we need a little inspiration when it comes to cabbage, potatoes, carrots.
We all know that eating fresh vegetables is the key to maintaining good health, however, finding easy vegetable side dish recipes is not always so easy.
How about my German red cabbage recipe. Delicious served with some roast pork or beef and it is a popular German Chrismas recipe. There is also a recipe for Sauerkraut, that not only tastes good, it is healthy too!

For 4 people you will need:
400g parsnips
400 carrots
300g potatoes
3 eggs
4 dessert spoons flour
freshly ground salt and chopped coriander
1 teaspoon honey
100ml oil
fresh herbs or your choice
500g quark
ground pepper
Peel the parsnips, carrots and potatoes and then roughly grate. Mix the grated veg with the beaten eggs and flour. Season with salt, coriander and honey. Form small pancakes from the mixture and then fry in oil until golden brown on both sides.
To prepare the herb quark: Carefully wash the herbs, drain, pat dry and then finely chop. Mix the herbs into the quark and season with salt and pepper. Once the hash browns are cooked, drain them on kitchen roll to remove any excess oil. If possible serve the hash brown hot with the herb quark.

Ingredients (approx. 4 people)
2 litres water
750g green beans
Salt
1 onion
40g butter oder margarine
freshly ground black pepper
ground grated nutmeg
1 tablespoon chopped parsley
To prepare:
Bring the water to boil in a saucepan. Meanwhile wash the green beans and slice into even pieces. Once the water is boiled add a little salt and the green beans. Cover with a lid and simmer for 8-12 minutes until tender.
While the beans are cooking, peel the onion and chop into cubes. Melt the butter and then saute the onions in the butter.
Drain the green beans well over a sieve. Place in a flat dish, add the onions and mix well. Season with salt, pepper and nutmeg. Sprinkle the parsley over the top.
Alternatively you can prepare a bechamel sauce and pour it over the cooked green beans. Lastly sprinkle with the onions and parsley.
