Not just for summer, my mixture of green, chopped salads can be served at any time of year.
I tend to serve a fresh green salad with every meal.
There is a refreshing one using tomatoes and a German cucumber salad
served in a great dressing. One of my favourites is Feldsalat (lambs
lettuce). It is found on all the menus in Germany and tastes just fab
in a tangy dressing. This is unfortunately a winter salad so you have to make the most of it when it's in season.
I do think a great salad dressing makes all the difference. You
probably have your own recipe but one of our tried and tested dressings
is:
Olive oil, balsamic vinegar, lemon juice and honey. Just whisk the
ingredients together and hey presto, a tasty dressing. In fact it is my
son's favourite. In fact whip up a batch in a jam jar and keep it in the fridge.
If your kids aren't into healthy eating, try out my German carrot salat (Karottensalat), my kids absolutely love it even though they are not huge fans of carrots. It is a great hit with kids and adults alike and graces every barbecue!
What's great about them is that they are so versatile and can incorporate any number of vegetables, sometimes meat or seafood. They are a great way of adding variety to our meals, part of our 5 a day, or sometimes just using up what you have in the fridge. So conjure one up today!
