Here is my authentic German potato salad recipe. Or (Kartoffelsalat) as it is known in Germany. Yes, the highlighted comment above was from a visitor to my site.
Each region in Germany tends to have their own recipe for German potato salad. My mother-in-law, from Baden-Württemburg, gave me this recipe, so it is an authentic German recipe.
You’ll want to make sure that all the potatoes are even in size so that they are all
cooked at the same time. You can use large or small, as you wish. If they aren‘t cut them in half.
My recipe is easy to make and tastes delicious. Served just warm with meatballs, Maultaschen or a slice of grilled meat, this recipe is sure to be a winner. Make a big batch, invite some friends round for a barbecue and enjoy!
My German potato salad recipe is best served warm. You can keep any left overs in the fridge for a couple of days but take it out a couple of hours prior to eating so the potato salad reaches room temperature.
8-10 salad potatoes
1 onion
1/2 cup of warm meat broth
white wine vinegar, sunflower oil, salt and pepper to taste
Steam the potatoes in their skins until tender. If you have any potatoes from the day before, even better as they are easier to slice. Scrape them and let them cool slightly until just warm.
Chop the onion finely.
Slice the potatoes thinly with a potato slicer or a vegetable knife. Place in a large bowl.
Add the onion and enough warm meat broth
so that the potatoes are quite moist but not sitting in broth! and leave to soak for an hour.
Lastly add enough sunflower oil, vinegar, salt and pepper to taste.
Again I can't give exact quantities but I suggest that you start off
with a couple of tablespoons of each of the oil and vinegar and then add
more to taste.
Mix thoroughly. The potato salad should not be too dry, but quite moist.
Serve with your favourite German recipe such as Wiener Schnitzel.
Prepare the German potato salad as above. Peel one whole cucumber
and thinly slice (but not paper thin). Add at the very end and mix
through. Sprinkle one dessert spoon of finely chopped dill over the
salad.
