Anyone who can cut up a potato or any vegetable for that matter can make soup in a little more time than it takes to open a tin and heat it up. My two sons love helping me in the kitchen and enjoy tasting their creations afterwards.
Try my easy recipe using pancakes (flaedlesuppe). I first tried it at a wedding and have been hooked ever since. I have given this recipe to many friends who now also enjoy it.
I normally tend to follow the seasons and their produce, but you can conjure up a warming bowl from almost anything.

A visitor requested a recipe for oxtail soup for her Dad. I got this recipe from a friend, but have never cooked it myself so hope it tastes as good as she says.
1 Oxtail, 500 g lean Ox meat or beef, 1,5 l water, 1 bunch of soup vegetables (carrot, leek, celery, parsley, 10 peppercorns, 1 tsp salt, 1 fresh bay-leaf,, 1 small piece of ginger, 1/8 l Madeira
Chop the tail and meat into pieces. Brown in a pan, without fat, with the peppercorns and salt. Add half of the Madeira and the water. Add the washed vegetables, bay-leaf and ginger and simmer gently for about 3 hours until the meat has decalcified and is thready. Sieve the broth into a pan and season with salt and Madeira.
Enjoy with crusty bread.
