Again, my stuffed pepper recipe is not necessarily German. But I felt I had to include it here on my ground beef recipes page. Easy recipe for stuffed bell peppers filled with ground beef, rice, herbs and garlic. Tasty and healthy too! Hope you enjoy your stuffed peppers as much as we do.
4 medium size red or green peppers
375 ml of clear meat stock
125 g rice
250 g ground beef
1 onion, finely chopped
salt and pepper
4 dessert spoons rape or sunflower oil
125 ml of clear meat stock
1 dessert spoon tomato puree
1 clove of garlic, peeled and chopped
1 tsp mixed herbs
Bring the 375 ml of hot meat stock to the boil and cook the rice as per instructions. I normally use basmati rice and it takes about 10 minutes.
Meanwhile, cut top off peppers 1 inch from the stem end, and remove seeds.
Preheat oven to 180 degrees C. Heat the oil in a large pan over a medium heat. Add chopped onions and garlic, and cook, stirring often, until soft and translucent, about 5 minutes. Then add the ground beef and fry until browned all over. Remove the pan from the heat, add rice, tomato puree and herbs. Season generously with salt and pepper. Mix well.
Arrange the peppers cut side up in a baking dish, then stuff peppers with ground beef filling. Add 125 ml hot meat stock to the baking dish. Place in oven and bake for 40-50 minutes.
Serve stuffed bell peppers with a crispy green salad and bread.
