These simple Christmas cookies are a joy to make and eat. The kids can help too with one of my easy German christmas cookies recipes.
Melt in your mouth German Linzer Sterne are baked and then sandwiched together with raspberry jelly and then coated in powder sugar.
You will need a star cookie cutter to make these German cookies.
Makes approx 45 cookies:
For the dough
300g flour
125g caster sugar
150g ground walnuts
tiny amount of vanilla flavouring
pinch salt
1/2 tsp grated lemon rind
250g cold butter (in cubes)
3 egg yolks
Additionally
powder sugar
150 raspberry jelly or jam
Mix all the dough ingredients together and knead until a smooth dough. Wrap in foil and leave in a cold place for 30 minutes.
Roll out the dough and cut out 90 stars (approx. 7cm diameter) Cut out a small hole in the middle of 45 stars.
Place on a lined baking tray and bake in a preheated oven at 175 degrees C for about 12 minutes. Leave to cool.
Sprinkle powder sugar over the stars with holes. Warm the raspberry jelly and place a small amount in the middle of the stars without holes.
Place the star with the hole offset over the top and press firmly. Leave to dry and then enjoy.
