German Fleischsalat

I am looking for a recipe using shredded deli meats,

(probably a ham type or Lyoner bologna), mixed in a
mayo (don't know which brand), and finely chopped dill pickles (I think). It is delicious cold salad and can
be found in most delis.

My mother was a native German and a chef. I grew up on fleischsalat, she must have made a batch every week we ate so much of it! Wherever we lived in the U.S. she would seek out a German store to get her provisions. She had her own recipes for most classic dishes, but compared to most German food found here they are exceptional. For fleischsalat, I know that she used Leberkase ('liver cheese', though it would remind you more of mortadella or bologna) and ALWAYS German pickles. Dressing was mayo, pickle juice, a little German mustard, dash of Maggi or Worcestershire. I'm lucky enough to live in the Dallas area now, where the local sausage haus also has good quality Leberkase so I can get my fix now and then :).

Hello Dorothy (notice we have the same last name!)
You are talking about what you correctly call Fleischsalat, not Wurstsalat.
I am German, but live in the USA. I figured this recipe out on my own, after not being able to find the right recipe anywhere.
It is surprisingly easy:
Cut your thin cut bologna in thin strips.
Cut pickles in same size strips. If any way possible try to use German pickles.
The dressing is nothing but a little pickle juice mixed into mayonnaise(I use Hellman's). Just enough to thin it out a little.

Hi Dorothy,

I think you are looking for a typical Bavarian Wurstsalat which is prepared with Lyoner saugage.

You will find a recipe if you look under Brozeit on the navbar and then scroll down the page to find the link to the sausage salad recipe.
