German Cabbage Rolls Recipe

The recipe for cabbage rolls serves 4 people and is served with homemade tomato sauce. It may look like too many ingredients, but you will be delighted with the result. Impress your friends and family with a favourite German Krautwickerl recipe.



How To Make German Krautwickerl


You will need:

salt
1 head of white cabbage
1 dessert spoon oil
250ml chicken broth

For the filling

60g toast bread
100ml milk
1/2 small onion
1 dessert spoon butter
1 egg
1 tsp sharp mustard
grated rind of 1/2 lemon
200g minced veal
200g minced pork
freshly ground salt and pepper
dried marjoram
1 dessert spoon finely chopped parsley

For the sauce

1 carrot
1 onion
1/2 garlic clove
1 tsp tomato puree
1 dessert spoon cold butter
salt, sugar, cayenne pepper
1 tsp coriander seeds and black pepper corns

First blanch the head of cabbage in boiling salted water. Before blanching remove the hard cabbage trunk. Blanch for 3-4 minutes. While in the water carefully remove 4 cabbage leaves. Drain them on kitchen paper. Cook the remainder of the cabbage and use for another recipe. Or you can double the filling and sauce quantity to make more.

To make the filling, remove the crusts from the sliced bread and cube. Soften in a bowl with the milk for a couple of minutes then remove. Peel and finely chop the onion. Heat the butter in a pan and add the onion and fry lightly until glassy. Mix the egg in a bowl with the mustard and grated lemon rind.

Mix the ground meat with the soft bread, onion and the mixed egg and season with salt, pepper, pinch of marjoram and parsley. Divide the mixture by 4 and place a quarter on each of the cabbage leaves.

Roll up and secure with kitchen cooking thread.

Heat the oil in a pan and fry the rolled cabbage parcels gently until lightly browned all over.

Remove from the pan and set aside. Add the chicken stock and heat gently. Set aside.

To make the tomato sauce, peel the carrot and onion and chop roughly. Peel and chop the garlic clove. Fry the carrot, onion and garlic with some oil in a deep pan. Add the tomato puree, stir and heat gently through. Add the chicken stock to the pan and then place the cabbage parcels gently into the pan. Cover and simmer for 30 minutes.

Remove the rolls from the sauce. Add coriander, pepper to taste. Add the cold butter to the sauce and then season with salt, a pinch of sugar and cayenne pepper.
