The best of all my German banana cake recipes, one to make when you have a bowl full of ripened bananas.
A moist german banana bread recipe that will keep for a few days in a cake tin should you need it if friends turn up unexpectedly. I bake my easy banana cake in a loaf tin but it's up to you what type of tin you use.
450g bananas
225g plain flour
2 tsps baking powder
1/2 tsp salt
1/4 tsp nutmeg
125g fine sugar
125g butter
grated rind of 1 lemon
2 eggs
120ml (8 level tbsp thick honey)
Grease and line a loaf tin.
Peel the bananas, then mash the flesh with a fork. Mix the flour, salt and nutmeg together. Rub in the butter until the mixture resembles fine breadcrumbs.
Stir in the sugar, lemon rind, eggs (6 tbsp) honey and the mashed banana. Beat well until evenly mixed. Put the banana cake mixture into the prepared tin.
Bake the cake in a pre-heated oven ast 180 degrees C for about 1 1/4 hours. Cover the top of the cake with foil if necessary. Test with a skewer which should come out clean if the cake is cooked.
Cool the cake slightly and then turn out onto a wire rack. Gently warm the remaining honey and brush over the cake. If liked sprinkle crushed sugar over the top.
Normally I buy a few bananas and they are eaten in no time. So if you buy bananas specifically to make my banana bread make sure you hide them from the family and wait for them to go brown and soft inside. Lots of people throw these away, don't, simply use them up by making my banana bread recipe.
